The wood pear is the original form of today’s cultivated pear. With the addition of a wide variety of tree components, a true forest cuvée is created. The blossoms and leaves of the wood pear were used like a filter bed when mashing the mash. The branches of the pear wood were manually chopped, the chips toasted in advance in the oven at 250°C and then added to the front wort with the help of two enormously large tea bags. The dried fruit stimulated secondary fermentation in the lager tank.
