Penyllan – Linnea

750ml – 5%abv

Chestnut colored ale with a tan head inspired by the Belgian “oud bruin” style.

After wild fermentation on red wine barrels for about a year, it is going through a short controlled vinegar-fermentation. Light aroma of balsamic vinegar, sour cherries and cocoa. Flavour is dominated by toffee and toasted malt, with the tartness balanced by bready sweetness.

Penyllan tasting notes update April 28th 2019 – vintaged

After two years in the bottle Linnea has developed in a remarkable way.

The acidity is dialled back and the slight acetic touch is also milder than it was in the “fresh” bottles. A delicious but unexpected overtone of chocolate is now the dominating flavor. It is facinating how the “Garden party” (Penyllan’s house yeast) continues to transform this beer…
