Spontaneously fermented beer obtained from the fermentation of blackberries, blended with 1, 2 and 3 years lambic to reach a final concentration of fruits of 300-350 gr fruit per liter. Unfiltered and unpasteurized, it is re-fermented in the bottle for several months. The lambics used were fermented and matured in their own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity sweet-sour and round with a certain depth which makes this Mûre à l’ancienne may be more accessible for lambic/gueuze drinkers.
